The rule about wishing early
This is the single most useful thing to know. In German-speaking countries, congratulating someone before the day itself is considered to bring bad luck. Colleagues will wait until the actual morning. If you send a message the night before, expect a correction rather than a thank you.
If you genuinely cannot reach them on the day, send it afterwards instead and say "nachtraglich" — belatedly. Late is culturally fine. Early is not.

German has a formal Sie and an informal du. The work phrases above use Ihnen, the formal form. Using dir with a manager you are not on first-name terms with is a real misstep, more so than in English.

The birthday song in German
The English tune is sung with German words:
Zum Geburtstag viel Gluck, zum Geburtstag viel Gluck, zum Geburtstag liebe [name], zum Geburtstag viel Gluck.
There is also a much-loved older song, "Wie schon, dass du geboren bist", which translates as how good that you were born. At family parties it is often sung instead of the imported tune.
